Choose different approvers for holidays - not necessarily line manager

We have a number of employees who have different approvers for their holidays, ie, not their line manager.

I was told to use the email configuration to select who would get the holiday request, however, this works by choosing a tag from the dropdown, which would mean that we can only choose a whole department, not an individual.

Is it possible to please add employees to the email configuration so we can pick and choose which employee’s requests go to which approver?
